There are so many of us that love to watch the Today Show for one reason or another which is why the show has been so popular for so many years. It is no secret that the Today Show can teach us all something in every broadcast. Recipes are more commonly the biggest hit for the show and having a celebrity chef come on to dazzle us with cooking skill is fantastic. One of the most favorite recipes from the Today Show is pasted on this article which you can easily follow and make a delicious family meal. During the colder months it is important to eat well, get your vitamins and warm up your stomach so enjoy the following recipe which is perfect for all three reasons.

Stuffed Potatoes and Rice

Ingredients

6 medium sized potatoes

2 tablespoons vegetable oil

2 tablespoons salt or less

1/3 cup blue cheese

1 teaspoon pepper

1/3 cup heavy cream

1/3 cup chopped chives

6 pieces of aluminum foil

Preparation

1 – Preheat oven at 350F

2 – Toss potatoes with vegetable oil and salt

3 – Wrap potatoes in aluminum foil – bake for approximately 45 minutes

4 – remove potatoes from oven, allow to cool and remove foil

5 – Cut sides of potatoes open for filling and if needed hollow out the middle

6 – Mix cheese, pepper and cream with the previously removed potato

7 – Stuff the potatoes with mix

8 – Grill the potatoes until the cheese is melted

9 – Enjoy
